Butter lettuce feels like such an indulgence. It makes me WANT to eat salad. It’s so delicate and delicious. It pairs beautifully in this salad with pear, avocado, pea shoots and almonds. Build a dinner party around the Winter Butter Lettuce Salad, as your first course, during this cold month!
Little ol’ lettuce is so good for you. It contains vitamin c (helps immunity and is high in antioxidants), calcium (great for bone building), vitamin k (necessary for blood clotting and helps prevent osteoporosis), vitamin A (supports reproductive health, heart health, lungs, and eyes), folate (production of genetic material), magnesium (great for sleep), and potassium (helps heart and nerve function.)
Vary how you do the Butter Lettuce Winter Salad. Try out sunflower sprouts instead of pea shoots. Swap pecans for almonds. If you don’t have pear, try apple instead. The butter lettuce and the avocado, however, are both key to the delicate, creamy flavor.

And one final note on the salad dressing. Always having a salad dressing on hand is super key. We make one whenever doing our food prep–whatever suits your vibe. Then when it runs low, make another one! It really encourages you to make salad. If it’s lunchtime and I’m thinking salad, but I haven’t made a dressing, forget it. I’ll make a sandwich instead. - 1 head Butter lettuce
- 1 pear sliced
- 1 avocado sliced
- Pea shoots cut into 1” long pieces
- 1/4 cup almonds toasted and chopped
- We recommend toasting the chopped almonds, at about 300 degrees for ten minutes or so, perhaps sprinkled with a bit of sea salt.
- Combine salad ingredients in a bowl, dress and serve!
