- 2 Tbsp. Olive oil or coconut oil
- 2 zucchini
- 1/2 tsp. sea salt
- Preheat a large frying pan to medium heat.
- Cut one end off each zucchini and then cut the zucchini in half. Spiralize each half until you have a pile of noodles.
- Pour some oil into the pan. Saute the noodles with sea salt until tender and browned.
- Serve under any Bowl, with fish, roasted veggies, a bean dish….you name it!
You can also make veggie noodles out of beets, sweet potatoes, cucumbers, and more. Whole Foods occasionally sells already-spiralized veggies in the prepared veggie section. Eating them raw is also a great enzyme-packed option.
*don’t cook with extra virgin olive oil as it doesn’t like high temperatures
