Watermelon, Jicama, Radish + Cucumber Salad

Late summer is a wonderful time for fresh, local produce.  You can certainly find watermelon, radish and cucumber at the farmer’s market at this time of year. This side dish satisfies with an incredible crunch, and light, sweet flavor. I made it as a side-dish for ten for a back-to-school potluck, and it will transport well and get lots of oohs and ahhs from the kids and the adults!

Watermelon, Jicama, Radish+ Cucumber Salad

Serves 10

For Salad:

1 watermelon, diced
1 cup of jicama, thinly sliced
1 cucumber, thinly sliced
3 radishes, thinly sliced

For Dressing:

1/4 cup white champagne vinegar
1 Tbsp. extra virgin olive oil
1/4 tsp. sea salt
1 tsp. agave nectar
juice from half a lime

  • Combine the dressing in a jar and SHAKE!
  • Slice and combine the salad ingredients, and serve in a bowl, well tossed with the dressing.
  • Keep chilled!
