Spring is here! I’m just thrilled. The blossoming trees are beyond gorgeous and bring me so much joy. The days are getting warmer, I’m getting my hands dirty in my garden, and it’s just GOOD.
Spring vegetables are incredibly delicate and flavorful. I love the bitter but fresh taste of radicchio, the crisp and gentle texture of microgreens, and the beauty of the watermelon radish. I created this dinner bowl to feature spring’s beautiful produce. It is such a lovely balance of healthy and vibrant: it’s grain-free and vegan, but also packed with the enzymes of raw vegetables, the warmth and protein of lentils, and the heartiness of sautéed mushrooms. You can swap out the broccolini for spring asparagus if you have it available!
