Olive Lemon Salmon
  • 1lb salmon
  • 1 lemonsliced very thin, plus one for juicing
  • salt and pepper to taste
  • 1jar kalamata olives
  • handful green olives
  • 1jar capers
  • EVOO
  1. Preheat oven to 400. Make a foil boat to hold the salmon and place on a baking sheet. Place the salmon in the foil and sprinkle with salt and pepper. Squeeze one lemon on top. Place the lemon slices on top and turn on the broiler in your oven. Broil salmon for 5 minutes until corners begin to blacken a bit. Turn off the broiler and move pan to center of the oven, and cook for about 10 (or less depending on preference of done-ness.)
  2. Meanwhile, chop the olives and cook with the capers in a hot frying pan with olive oil until fragrant–about 10 minutes.
  3. Serve salmon with lemons still on top, and add a dollop of chopped olive mixture to each piece.
