Mango Jicama Salsa
This is an elegant and flavorful accompaniment to any tacos, or to breakfast burritos or lunch bowls.

Ingredients
  • 2 mangocut into chunks
  • 1/2cup jicamasliced like matchsticks
  • 1 heirloom tomatodiced (or cherry tomatoes, sliced)
  • 1 1/2cups cabbagegreen or purple, shredded
  • 2 limejuiced (or 1 if you prefer less tart)
  • 1/4tsp. sea salt
  • 1/4cup mint
  • 1 purple spring onion(or shallot)
Instructions
  1. Combine in a large bowl and let sit in fridge to absorb the lime before serving. Lasts for 1-2 days in fridge.
