Herbed Cashew Dip
This is a wonderful dip to have on hand if you are doing a raw day. I love this dip over sprouts. Because the sprouts are high in protein and so are the cashews, it’s a good, hearty raw meal. You can also serve with cut-up veggies of your choice. Or as a sauce on various bowls. Or substitute cumin + coriander for the herbs, and serve with tacos!
  • 1/2cup cashews, rawsoaked and drained
  • 4Tbsp. extra virgin olive oil
  • 1/2tsp. garlic
  • ½Tbsp. Herbs de Provence
  • 1 lemonzested and juiced
  • 1/8cup water(add more water to thin)
  • 1/2tsp. sea salt
  1. **Soak ½ a cup of cashews in water for 1-2 hours (not longer)
  2. In a vitamix or cuisinart combine until creamy:
