Little Green’s Chai Pecan Overnight Oats are one of our favorite breakfasts. We love thinking about breakfast the night before. It locks you into eating something healthy instead of skipping breakfast or reaching for the nearest sugary cereal.
With Chai Pecan Overnight Oats–and with all overnight oats–you HAVE to plan ahead! This recipe is filled with anti-inflammatory spices that are both good for you AND packed with flavor. It’s even a kid favorite. We like eating them warmed up in the morning, but in the summer you can devour them cold, straight from the fridge.
Oats are rich in Dietary fiber – a specific type called beta-glucan, which is known to help lower levels of bad cholesterol. They are high in antioxidants. They can help with blood sugar control. And they are high in many vitamins & minerals : Manganese, Phosphorus, Magnesium, Copper, Iron, Zinc, Folate, Vitamin B1 (thiamin), and Vitamin B5 (pantothenic acid). Good stuff.
This recipe calls for pecans, but you can swap them out for cashews or walnuts. Feel free to also swap the almond butter for peanut butter. (or even try out tahini!) The banana is key for sweetness. And the aforementioned spices–critical!
Make sure you select gluten-free oats! Many oats are made in a factory with other glutinous items and can easily have cross-contamination. We love oats from Trader Joe’s or from Thrive Market.

- 1 cup oats
- 1 banana
- 1/4 cup chopped pecans
- 1 Tbsp. almond butter
- 1/4 tsp. cinnamon
- 1/8 tsp. ginger
- pinch cardamom
- pinch nutmeg
- pinch cloves
- pinch black pepper
- 1/2 tsp. vanilla
- 1 cup almond milk
- Combine in a jar, mixing well, and refrigerate overnight.
- In the morning, serve warm, if desired, by heating on the stovetop with a little almond milk.
- Serve with berries or fruit slices for some extra fiber and nutrients!
