I’m pretty obsessed with this smoothie. A carrot turmeric smoothie, it’s fun and different and creamy and sweet. It delivers a lot of nutrients you might not ordinarily get in the morning. Thanks to the carrot, it contains vitamin c, iron, potassium, and calcium. The turmeric and ginger make it super anti-inflammatory, too. I can usually find pre-grated carrot, even at Trader Joe’s, Whole Foods, and your usual grocery store. If you use half the bag of grated carrot, freeze the rest for a future smoothie so it doesn’t go to waste!
A few tricks of the trade. I like to pour the remainder of my can of coconut milk into an ice tray so I have coconut ice cubes for future smoothies. It makes the creamiest, iciest smoothies ever! At Little Green, we also buy fresh turmeric and ginger, wash and dry it, chop it, and freeze it in freezer bags for easy future use.
For a medicinal, power-packed smoothie, and/or if you’re in perimenopause or menopause, go ahead and add your flaxseed and maca to this! - 1/2 cup grated carrot
- 1 inch frozen ginger chopped
- 1 inch frozen turmeric chopped
- 1/8 tsp black pepper for turmeric absorption
- 1 frozen banana
- 1/2 apple sliced
- 1/2 lemon sliced (rind on)
- 1 cup coconut water
- 1/2 can coconut milk
- Blend in a vitamix or good blender.
