Well, the weather outside is frightful, but the porridge is so delightful! With the changing seasons, I’ve moved from my chilly smoothie bowls to warm and cozy porridges in the morning. These tiny gems of apples make the best breakfast treat. In typical Little Green fashion, this dish is made even easier by the night-before prep!
An apple a day really can keep the doctor away. In addition to having a prebiotic effect that promotes good gut bacteria, apples also are good for your heart, lower your risk of diabetes, help prevent cancer, and fight asthma. They are also good for weight loss as they are low in calories, and high in fiber and are filling.
Carmelized Crimson Golden Apple Porridge
serves 2
1 cup gluten-free oats
1 3/4 cups water
3 tiny crimson gold apples
1 Tbsp. coconut oil
2 Tbsp. pecan halves
2 Tbsp. raisins
2 Tbsp. shredded coconut
2 tsp. maple syrup
1/2 cup unsweetened almond milk
cinnamon
Instructions:
- Soak the oats in a ceramic bowl with water to cover overnight. In the morning, drain and rinse. Bring 1 3/4 cups of water to boil in a saucepan. Add a pinch of salt and the oats, and reduce heat to medium. Cook for about 5 minutes, stirring frequently.
- Warm the coconut oil in a frying pan, and cut the apples. Carmelize them on low heat and add a tiny drizzle of maple syrup at the end.
- In a large bowl, combine oats, apples, raisins, pecans, coconut, maple syrup and almond milk. Shake a little cinnamon on top, and enjoy!
