As winter approaches, I find myself craving warmth in our morning meal. I love that oatmeal can provide this, but it is also so much more! Forget the tasteless, sticky oatmeal of your youth, and enjoy some wonderful flavors in your breakfast bowl. I love that this dish is best begun the night before (ease of the breakfast rush hour!) Because oats contain phytic acid, which can make it difficult for some people to digest, it is best soaked overnight before preparing it. Soaking removes the phytic acid, making it more digestible, but also creamier and more delicious.
The cardamom flavor of this combo instantly transports me to my Norwegian roots, and it results in a perfectly spiced and comforting breakfast that is also nourishing and satisfying!
Cardamom Cinnamon + Hemp Oatmeal
serves 3
1 1/2 cups oats
2 1/2 cups water
sea salt
1/4 tsp. cinnamon
1/8 tsp. cardamom
1/2 tsp. vanilla
walnuts, finely crushed
raisins
strawberries, finely chopped
hemp hearts
maple syrup
almond milk
- Place oats in a ceramic bowl, covered a few inches by water, overnight. In the morning, drain and rinse.
- Bring 2 1/2 cups of water to a boil and add sea salt. Pour in your oats, and stir frequently, at a simmer, uncovered, for about 5 minutes. At the end, add in the cardamom, cinnamon, and vanilla. Stir well.
- Pour into breakfast bowls. Serve with raisins, maple syrup and almond milk stirred in. Add as toppings: strawberries, walnuts, and hemp hearts.
