Massaged Kale Salad

Massaged Kale Salad

1 bunch of kale (any kind)

sea salt

1 Tbsp. olive oil

1 diced apple (with skins on) or pear

handful of raisins

slivered almonds or pecans

Optional Add-ons:

handful of pumpkin or sunflower seeds

¼ diced red onion

coconut flakes (large)

sprinkle of hemp seeds–for more nutrition & protein!

  • Chop the kale into thin strips about 2 inches long.
  • Toss in a bowl with a sprinkle of sea salt and about 1 Tbsp. of olive oil.  
  • With your hands, massage the kale for a minute or two until soft.
  • Add additional ingredients, mix well, and toss with Orange Ginger Honey dressing (recipe below.)

Orange Ginger Honey Dressing  

½ cup extra virgin olive oil

½ inch ginger, chopped with skin peeled off

½ Tbsp. raw honey

juice from ½ an orange

¼ tsp. salt

-Blend in vitamix or good blender until smooth.
