- 2 tsp sesame oil
- 4 shakes Tabasco sauce
- 4 tbsp Braggs Apple Cider Vinegar
- 6 tbsp tamari
- 4 tbsp peanut butter unsweetened
- 1 package rice noodles
- 1 cucumber seeded and julienned (thinly sliced)
- 1 carrot julienned
- 1 granny smith apple julienned
- ½ cup bok choy julienned
- ½ cup purple cabbage julienned
- 1 cup bean sprouts
- ¼ cup peanuts chopped. plus more for garnish
- 1 lime 1/2 juiced, 1/2 cut into wedges
- Cook noodles, according to package directions. Set aside in a large bowl.
- Whisk sauce ingredients to combine well, and pour over noodles.
- Add vegetables and peanuts, toss well to combine (may be easiest to toss with your hands)
- Garnish with chopped peanuts and a squeeze of lime. Eat at room temp. or chilled.
Also delicious served with pickled ginger!
